1 T. active dry yeast
2 T. brown sugar
1 1/8 t. slt (3/4 for cinnamon/sugar)
1 1/2 c. warm water
3 c. flour
1 c. bred flour
2 c. warm water
2 T. baking soda
2 T. butter, mlted
2 T. coarse kosher salt
dissolve yeast, brown sugar, and salt in 1 1/2 cups warm water. stir in flour and knead dough on a floured surface until smooth and elastic, about 8 min. Place in a greased bowl and turn to coat the surface. Cover and let rise for 1 hour.
Combine 2 c. water and baking soda in a 8 in square pan. after dough has risen, cut into 12 pieces. Roll each piece into a 3 foot rope, pencil thin. Twist into a pretzel shape and dip into the baking soda solution, or cut ropes into 2 to 3 inch pieces for pretzel bites and dip those into the solution. Place on a parchment covered cookie sheet and let rise 15 to 20 minutes. Bake at 450 for 8-10 minutes or until golden brown. Brush with melted butter and sprinkle with coarse salt, garlic salt, or cinnamon sugar.

I only made a couple into the actual pretzel shape. We did mostly the pretzel bites/sticks. YUM!
